- 2 sprigs of fresh thyme
- 1 bay leaf
- 0.5 red pepper in strips
- 0.5 yellow pepper in strips
- 1 onion thinly sliced
- 1 carrot chopped into thin strips
- 1 tablespoon of sugar
- 1/2 teaspoon allspice
- 1 teaspoon Worcestershire sauce
- 1 splash of scotch whiskey
- Juice of 1 lime
- 3/4 cup malt vinegar
- Pinch of salt and pepper to taste
How to prepare it step by step?

- Rinse the fish and rub with lime juice. Season with salt, pepper, and seasoning to taste. Booking.

- Discard the bay leaves and thyme.
