- 2 large onions
- 60 ml sunflower oil
- 4 cloves of garlic, minced
- Thumb-sized grated fresh ginger
- 30 ml Madras paste
- 10 ml sweet paprika
- 1 bunch of cinnamon
- 6 cardamom pods lightly beaten
- 4 cloves
- 2 bay leaves
- 15 ml tomato puree
- 1 kg lamb, cubed
- 150 ml natural Greek yogurt
- Fresh cilantro to decorate

- Finely chop the onions in a food processor.
- Heat the oil in a large heavy-based frying pan over medium heat.
- Sauté the onions, covered, stirring occasionally, until golden and soft, about 10 minutes.
- Add the garlic and grated ginger, and fry for 5 more minutes until fragrant.
- Add the Madras paste, tomato puree, and spices. Mix well to coat the onions.
- Add the lamb cubes and a little water to lightly cover the meat. Stir to integrate all the ingredients.
- Lower the heat to medium-low and add the Greek yogurt, mixing gently to combine.
- Cover the pot and simmer for 45 minutes, stirring occasionally, until the meat is tender and the sauce is thick.
- Serve hot, garnishing with fresh chopped cilantro.
