- 480 ml dried black beans
- 454 g peppered pork
- 454 g pork shoulder, cut into pieces
- 224 g chopped chorizo
- 224 glorify
- 1 large onion chopped
- 4 cloves of garlic, minced
- 4 stalks of celery, chopped
- 2 large tomatoes, chopped
- 1 bay leaf
- 5 ml cumin
- Salt and pepper to taste
- Olive oil
- Cooked white rice to serve
- Lemon and green onions to decorate
How to prepare it step by step?
Preparation
- Rinse the black beans and let them soak overnight. Cook beans in boiling water until tender, about 1-1.5 hours. Drain and reserve.
- In a large pot, heat the olive oil over medium heat. Sauté the peppered pork and shoulder until golden brown and aromatic. Remove and reserve.
- In the same pot, add more oil if necessary and sauté the onion, garlic, and celery until soft and translucent.
- Add the chorizo and blood sausage, cooking until they release their rich, smoky aroma.
- Add the chopped tomatoes, cooked beans, reserved meat, bay leaf, cumin, salt, and pepper. Cover with water or broth until all ingredients are submerged.
- Cook over low heat for 2-3 hours, stirring occasionally, until the flavors are well integrated and the meat is tender and falling apart.
- Serve the feijoada hot with white rice, decorated with lemon slices and green onions.
