- 100g butter
- 900 g lamb
- 3 lamb kidneys
- 2 medium onions
- 4 carrots sliced
- 25 g plain flour
- 10 ml Worcestershire sauce
- 500 ml chicken broth
- 2 bay leaves
- 900 g potatoes
How to prepare it step by step?
Preparation
- Heat the oven to 160°C / fan 140°C / gas 3.
- In a large, deep saucepan, melt a little butter over medium heat.
- Brown the lamb in batches, about 5 minutes per side, until golden. Transfer to a plate.
- Brown the kidneys in the same pan for 3-4 minutes each side. Set aside with the lamb.
- Add more butter if needed, then sauté the onions and carrots until golden brown, about 8 minutes.
- Sprinkle flour over the vegetables, stirring for 2 minutes until well-coated.
- Stir in Worcestershire sauce, then gradually add broth, bringing to a gentle boil.
- Return the meat and bay leaves to the pan, then remove from heat.
- Arrange sliced potatoes on top, drizzle with a bit more butter.
- Cover and bake for 1½ hours, until potatoes are tender.
- Remove lid, brush potatoes with additional butter.
- Increase oven temperature to brown potatoes or broil for 5-8 minutes until golden.
